The knowledge of the physiology of this species is still far from that of other species of this family; however, in recent years the metabolism and transport of sugars, mineral nutrition, hormonal control and molecular biology have been studied in depth. This chapter reviews the most recent knowledge of fowering, fruit set and development, and ripening, as well as the environmental conditions that regulate nutritional and hormonal relationships and the molecular mechanisms that govern these processes.
