The article recounts the origins and symbolic meaning of Lisbon’s celebrated pastry, an authentic emblem of Portuguese tradition. Born in the Belém district, beside the Mosteiro dos Jerónimos, the Pastel de Belém is rooted in nineteenth-century monastic history, when the Hieronymite monks devised a yolk-based cream to reuse the remnants of convent processes. Even today, only a few master pastry chefs jealously guard its formula, a symbol of ritual and identity-laden knowledge. The text intertwines the story of the pastry with that of its birthplace, evoking Belém as a symbolic space of departures and returns – a gateway to the great explorations and a crossroads of cultures, spices, and traditions. The Pastel de Belém thus becomes an emblem of collective memory and of travel, a sensorial and spiritual experience that unites the contemporary traveller with the ancient navigators, transforming an everyday act – the tasting – into a gesture of belonging and rebirth.
