The Monks’ Secret: When a Pastry Becomes the Destinatiion of a Journey

The article recounts the origins and symbolic meaning of Lisbon’s celebrated pastry, an authentic emblem of Portuguese tradition. Born in the Belém district, beside the Mosteiro dos Jerónimos, the Pastel de Belém is rooted in nineteenth-century monastic history, when the Hieronymite monks devised a yolk-based cream to reuse the remnants of convent processes.
