This article is aimed at examining the relationship between food sustainability and human dignity under international law. Attention is first given to the content of food sustainability. It is thus shown that such a notion, which originates from the broader concept of sustainable development, has acquired an increasingly specific content, while still lacking a precise legal status (section 2). Starting from the difficulty of defining the legal status of this notion, the analysis then enquires whether and to what extent the concept of human dignity might be used to strengthen — or, conversely, to limit — the legal significance of food sustainability. Based on the definition of two distinct dimensions of the concept of human dignity, their connections with the concept of food sustainability are first examined in general terms (sections 4 and 5). Subsequently, it is investigated whether the legal interplay between human dignity (in both its dimensions) and food sustainability can be framed in terms of conflicting values, even with reference to specific legal situations (section 6).
