Descrizione: The scientific body of work presented in this study explores the oenological potential of the non‑conventional yeasts Starmerella lactis‑condensi and Candida oleophila, isolated from high‑sugar ecological niches such as manna and honey. Through metabolomic and sensory approaches, the study demonstrates how these strains, when used in consortium with Saccharomyces cerevisiae, enhance the aromatic complexity of wine, increase the production of fruity and floral esters, and protect bioactive compounds such as trans‑resveratrol. The research proposes an innovative fermentative model based on microbial synergy and on the valorization of Sicilian autochthonous grape varieties.
