The aim of the study was to evaluate patients' customer satisfaction with the hospital catering services of two public hospitals and one private sector hospital in the city of Palermo (Italy). A multiple choice questionnaire was administered by face-to-face interview to 207 of 227 hospitalized patients. Positive responses regarding the perceived quality of food were given especially by patients of the private sector hospital, 80% of which reported being satisfied with the catering service. A higher percentage of patients in the private sector hospital were satisfied with the food distribution modalities with respect to the two public hospitals. Only 3% of patients in the private sector hospital required their families to bring food from home, with respect to 7.9% and 30% respectively in the two public hospitals. Private sector patients also reported appreciating the wide availability of food and the help given by health care workers (79% vs a mean of 55% in the two public hospitals). No differences were found amongst hospitals with regards to the hygienic characteristics of meals. Obiettivi: lo scopo dello studio è stato quello di rilevare la ”customer satisfaction” nella ristorazione ospedaliera di pazienti ricoverati in due strutture pubbliche (Azienda Ospedaliera Universitaria Policlinico e Presidio Ospedaliero Asl 6) ed in un Presidio Ospedaliero privato di Palermo, valutandone le differenze anche in relazione alla diversa tipologia di preparazione dei pasti, con “cucina centralizzata”, nel pubblico, ed “in loco”, nel privato. Metodi: l’indagine è stata realizzata con questionario a risposta multipla mediante intervista diretta, somministrato a 207 pazienti, su 227 presenti, che hanno collaborato all’inchiesta. Risultati: Giudizi favorevoli sono stati espressi soprattutto dagli utenti del P.O. Privato per la percezione della qualità del cibo. Percentuali di soddisfazione superiori all’80% si registrano tra questi degenti contro quella più bassa riscontrata tra i pazienti dei due presidi pubblici. Maggiori apprezzamenti sulla modalità di distribuzione del cibo sono stati anche espressi da pazienti ricoverati nel presidio privato. Inoltre, questi ultimi sono quelli che meno frequentemente si fanno portare cibo dai familiari (solo il 3% contro il 7,9% ed il 30% dei due presidi pubblici rispettivamente) e dichiarano di godere di un’ampia disponibilità e collaborazione da parte del personale sanitario (il 79% contro il 55% in media nelle due strutture pubbliche). Nessuna differenza invece è stata colta nei giudizi espressi da tutti gli intervistati, per quanto riguarda le caratteristiche igienico-sanitarie dei pasti. Conclusioni: questa indagine ha permesso di confrontare le esigenze degli utenti con il servizio proposto dalle strutture ospedaliere. La maggiore preferenza dei pasti forniti dal servizio di mensa interno rispetto a quello di ristorazione esterna è da attribuire, probabilmente, al diverso assetto gestionale ed organizzativo delle due ristorazioni. Alla luce dei nostri dati emerge l’esigenza di apportare cambiamenti nella gestione del servizio di ristorazione, in particolare dell’A.O.U.P, la struttura più interessata dalle criticità.
