How long does a banana take on its long journey before ending up in the displays of a supermarket or in a greengrocer’s counter before finally being eaten? According to some estimates, about 72 days from the moment of collection to arrival in the stores. In this long journey by ship from the production sites (India, Brazil, Ecuador and Indonesia), the banana changes its external color and its size, it is disinfected several times with pesticides, closed in refrigerated containers that maintain its freshness and consequently they slowly mature, until they arrive in the main European ports or in other nations and then be transferred by truck to the cities, to the wholesale markets and to those of distribution to the customer to finish, finally, on our table, beautiful, yellow, large and fragrant, in fact it tastes of pink: a diva eaten in seconds. This brief introduction with a clearly ironic ‘taste’ wants to be part of a wider reflection not so much on the aspects related to the quality of our food, but on everything that can concern historical, symbolic, architectural knowledge and not only related to the space that gravitates around food and which in the course of the evolution of civilizations has increasingly been the identity of one culture compared to another, has been transformed, enlarged, specialized and modernized. A space that we will define with the generic term of ‘hearth’. It all started about five million years ago, when fire changed man’s way of life, because thanks to fire he transformed food and reinvented the world, that is, he started civilizations. Fire is a symbol of a mysterious force to which many meanings are attributed: it is an archetype, how heat is able to change all elements ‘state’, how light has the power to illuminate everything that surrounds it.

Quanto tempo impiega nel suo lungo viaggio una banana prima di finire negli espositori di un supermercato o nel banco di un fruttivendolo per poi finalmente essere mangiata? Secondo alcune stime circa 72 giorni dal momento della raccolta all’arrivo nei punti vendita. In questo lungo viaggio in nave dai luoghi di produzione (India, Brasile, Ecuador e Indonesia), la banana vede mutare il suo colore esterno e la sua dimensione, viene disinfettata più volte con pesticidi, chiusa in container refrigerati che ne mantengono la freschezza e di conseguenza la fanno lentamente maturare, fino ad arrivare nei principali porti europei o di altre nazioni per poi essere trasferita con tir nelle città, nei mercati all’ingrosso e in quelli della distribuzione al cliente per finire, infine, sulla nostra tavola, bella, gialla, grande e profumata, infatti sa di rosa: una diva mangiata in pochi secondi. Questa breve introduzione dal ‘gusto’ chiaramente ironico vuole essere parte di una più ampia riflessione non tanto sugli aspetti attinenti alla qualità del nostro cibo, ma su tutto quello che può riguardare la conoscenza storica, simbolica, architettonica e non solo relativa allo spazio che gravita attorno al cibo e che nel corso dell’evoluzione delle civiltà è stato sempre più identitario di una cultura rispetto ad un’altra, si è trasformato, ingrandito, specializzato e modernizzato. Uno spazio che definiremo con il termine generico di ‘focolare’. Tutto cominciò circa cinquemilioni di anni fa, quando il ‘fuoco’ cambiò il modo di vivere dell’uomo, perché grazie al ‘fuoco’ trasformava il cibo e reinventava il mondo, ovvero dava inizio alle civiltà. Il ‘fuoco’ è simbolo di una forza misteriosa cui vengono attribuiti molti significati: è un archetipo, come calore è in grado di far cambiare ‘stato’ a tutti gli elementi, come luce ha il potere d’illuminare tutto ciò che lo circonda.
